Black doesn't really have any taste on pizza (to me), so it can't ruin it like green. It can't ruin my subway subs either.

Those are the ones that get pickled and become the green olives you see on shelves. Then there are the black olives you most often find in the store. Those are processed with lye. Other types of black olives may be processed by immersion in brine. All olive processing is ultimately to extract the substances in the olive that make raw olives unpalatable.
