They've got 9 up at the moment all from the recent GDC08 I believe. Fantastic presentations, which go into quite alot of detail into the game creation process of Halo3, my personal favourite presentation has to be on lighting and material, when you see the comparison shots with standard LDR lighting vs HDR it's such a huge difference! LDR looks just like Halo2 :D

I read through most of them, a lot of the stuff went right over my head (Lots of mathematics :p). The level design talk and the AI encounter talk (when this one didn't go into math) were most interesting to me.

Yea -- THIS is what I was disappointed in when I bought the Uber-Leet Halo 3 Helmet edition expecting bonus behind the scenes stuff.
