When it comes to quads, it is not required you have strictly quads in your mesh. If you know proper control of your edges and the results it will have when smoothed, tris and n-gons will not create nasty faces, on flat surfaces mostly though. However, that does not apply when creating the supporting edges, those must be quads or you'll get horrible results when smoothing.
yeah, that's why i said it is more of a guideline than a rule, but this tut is directed at total new comers and it is better to reinforce the idea, in my opinion.
also, later on im going to present different scenarios, one of them being a model with a flat surface in it, another being a more organic model. i'm also going to explain connect tool more in depth, and cover times when you use it and ring tool doesn't select all the edges because one along the way is a triangle or n-gon, etc.
