It celebrates the harvest and the Pilgrims eating with the Native Americans a long, long time ago. Nowadays it's an excuse to see your family and stuff yourself full of all kinds of delicious food.

We have a seperate day for that here in Canada/Ontario, it's called Family Day. It's kind of a stupid idea, but I'm not complaining considering it's a day off school and work.
