Just tweak some gene pool settings and leave it running on your desktop for a few days. Come back and you should have a dominant species. The trick afterwards is to save that gene pool and then to create a new one and get another dominant species and then breed the one from the other gene pool with that one. The possibilities are endless and also fun too.

Ok, I just started a new one and let it sit. Here's my dominant species:

They are undoubtedly retarded and can't swim worth crap, but they happen to be the most prolific thing in the pool.

Now I'm getting a lot of long purple things as well, hard to tell what's truly dominating:

Also, I started messing with settings. The population has been fluctuating as would be expected (pop increases, food decreases. Population dies off, food goes back up. Repeat)

But now I started getting more and more red / orange guys:
