WoL, one thing I want to know is how much of a 'remake' are you making the stock maps? If you are going to keep the same exact theme and just do everything in much greater detail, that's one thing, but if you are, for example, going to take Sidewinder and turn it into the inside of a UNSC ship or something, that's a different story. How much creativity are you intending to put into redesigning each level? I myself have had some pretty interesting remake ideas that take the map and bring it to new heights.
I am currently working on my Rat Race remake (don't expect anything major soon - I'm still learning how to model, and have a bit of a life left), which has been quite changed from the original scale, had an immense amount added to the general layout, and is firmly located in an Earth-based weapons shipping facility. Once I can model terrain properly I plan to remake Chill Out and Hang 'Em High as exterior semi-natural environments.
